Non-Alcoholic Peach Bellini (The Brunch Drink That Doesn't Need Prosecco)

The Bellini is the queen of brunch: peach, bubbles, and a champagne flute that makes any Sunday feel like an occasion. This version keeps all of that and drops the prosecco, using Riviera Peach iced tea to do the heavy lifting. It's alcohol-free, low in calories, and means the whole table can have one — including whoever's driving home.
No blender, no faffing with fresh peaches. Just pour, top, and hand them out.
What you'll need (makes 1)
- 1 can Riviera Peach iced tea (250ml), chilled
- 50ml soda water or an alcohol-free sparkling wine, well chilled
- Optional: 1 tsp peach purée for a thicker, more traditional Bellini
- A slice of fresh peach or nectarine to garnish
- Ice (optional — Bellinis are usually served without, but on a hot day, why not)
Method
- Chill your flute. A champagne flute is the classic Bellini glass and keeps the drink cold. Pop it in the freezer for five minutes if you've got time.
- Add the peach base. If you're using peach purée, spoon it into the bottom of the flute first. Then pour in the chilled Peach iced tea until the glass is about two-thirds full.
- Top with bubbles. Finish with chilled soda water for a light version, or alcohol-free sparkling wine for something closer to the real thing.
- Garnish. Slide a thin slice of fresh peach onto the rim and serve immediately.
Make a batch for brunch
For a jug that serves six: 4 cans of Peach, 250ml soda water (or alcohol-free fizz), and 2 tbsp peach purée stirred through. Keep it cold and add the fizz just before pouring so it stays lively.
